Callaloo is the spinach of Jamaica. The preparation is very similar to beets and curly kale. The Jamaican callaloo is known as chinese spinach and indian curly kale. Callaloo is a yummy side dish for fish an meet. Simply chopped and cooked in water until it gets tender. Dripped off well, mixed with a scotch bonnet pepper (cut in slices), salt and pepper it and butter it - that´s it. Delicious as quiche or mixed with ackee, too.
